Roasted Salmon with Parsley, Onion & Lemon

Ingredients
1 large salmon fillet
One bunch of parsley, chopped
1 tsp dried oregano (I used 3/4 tsp ground oregano)
2 cloves garlic, minced
1 red onion, finely sliced
EVOO
Juice of 1/4 lemon
Kosher salt & ground black pepper to taste

Steps
1. Preheat the oven at 200°C.
2. To make the marinade, whisk the above ingredients (except the salmon) in a small bowl.
3. Line a baking tray with foil and lay the salmon skin-side down. Pour the marinade over the fish and fold the foil loosely over the fish.
4. Bake for 10-15 mins.

Note
– Salmon has a high oil content, so use less oil in the marinade.
