A ‘set it and forget it’ dish that is super tasty. We picked the bones clean!

10 mins (Prep: 4 mins. Cook: 6 mins.)
3 garlic cloves, peeled
2 tbsp dried chilli flakes
1 tsp sea salt
1 mackerel fillet, skin on
1/2 large onion, sliced into rings
1. Mix garlic, chilli flakes, salt and olive oil in a bowl. Pound into a paste. Rub the flesh side of the mackerel fillet with the paste and set aside for at least 20 mins.
2. Line a baking tray with foil and brush lightly with olive oil. Place some onion rings on the foil and lay the mackerel fillet (skin side up) on top. Put more onion rings atop the fillet and drizzle with olive oil.
3. Roast the fish for 6 mins until cooked through (we used a toaster oven). Remove from the oven and leave to rest.
